Coffee Cupping at Blonza: Discovering Quality in Every Cup
Coffee cupping is at the heart of how we evaluate, understand, and celebrate coffee at Blonza. More than a tasting method, cupping is a shared language that connects farmers, exporters, roasters, and buyers through flavor, aroma, and quality. In this blog, we take you inside our cupping process and explain why it matters for delivering exceptional Ethiopian coffee to the world.
What Is Coffee Cupping?
Coffee cupping is a standardized tasting practice used globally to assess coffee quality. It allows professionals to compare coffees side by side and identify their unique characteristics—such as aroma, flavor, acidity, body, and aftertaste. By following a consistent method, cupping ensures transparency and fairness when evaluating different lots and origins.
At Blonza, cupping is essential to maintaining quality control and preserving the distinctive profiles of Ethiopian coffee.
Why Cupping Matters at Blonza?
Ethiopia is the birthplace of coffee, known for its diverse regions and complex flavor profiles. Cupping helps us:
- Select premium coffee lots that meet international quality standards
- Highlight unique regional characteristics from different growing areas
- Ensure consistency across exports
- Build trust with our partners and buyers worldwide
Every shipment we export is carefully cupped and approved before it reaches our clients.
Our Coffee Cupping Process
At Blonza, we follow a professional cupping protocol to guarantee accurate evaluation:
1. Fragrance & Aroma
Freshly ground coffee is assessed first for its dry fragrance, then again after hot water is added to evaluate aroma. This step reveals floral, fruity, spicy, or chocolate notes.
2. Flavor & Aftertaste
Once the coffee cools slightly, we taste it to identify flavor clarity, balance, and how long the taste lingers after swallowing.
3. Acidity & Body
We assess the brightness and liveliness of the coffee (acidity) along with its mouthfeel (body), ranging from light and tea-like to rich and creamy
4. Balance & Overall Score
Finally, we evaluate how all elements come together to form a harmonious cup worthy of the Blonza standard.
Celebrating Ethiopian Coffee Origins
Through cupping, we experience the diversity of Ethiopian coffee—bright citrus notes from highland regions, floral aromas, sweet berry flavors, and smooth chocolate finishes. Each cup tells a story of its origin, climate, and the farmers who cultivate it.
Our Commitment to Quality
Cupping is not a one-time activity at Blonza; it is a continuous practice. We regularly cup samples during sourcing, processing, storage, and before export. This commitment ensures that our customers receive coffee that reflects authenticity, freshness, and excellence.
